Ingredients
- Greek yogurt
- Strawberries
- Semisweet chocolate chips
- Coconut oil (optional)
Mix the Strawberries and Yogurt
Line a baking sheet or container with parchment paper. Stir together the strawberries and Greek yogurt.
Once you have your strawberries rinsed and finely diced, it's time to mix them with your Greek yogurt. If you want something a little sweeter at this point, you could add some sugar, honey, or maple
Scoop the Greek Yogurt
Spoon the mixture into twelve lumps on the parchment paper and freeze for an hour.
Do I need to grease the tray first? Nope! Once these are frozen they should lift off of the parchment paper super easily. It took me two baking sheets to fit all of these without them touching, but that'll be different based on the consistency of the yogurt you buy, how big your trays are, etc.
Melt the Chocolate
Melt the chocolate (and coconut oil if you are using it to thin out the chocolate and make it more dippable) in a microwave-safe bowl in 30-second intervals, stirring between each interval until the chocolate is completely melted.
Is the coconut oil necessary here? Not really, but it helps the consistency of the melted chocolate. It'll be runnier with the coconut oil, which is going to make it much easier to dip and coat the yogurt bites. You could probably use any neutral oil, but coconut oil tastes like nothing and it solidifies at room temperature (unlike other oils), so it works better for a chocolate coating.
Coat the Yogurt Bites
Dip the frozen Greek yogurt lumps into the chocolate one at a time, flipping to ensure each lump is completely covered. Once coated, place back on the baking sheet and freeze again for 20 minutes.
Once your chocolate is nice and melty, it's time to dip those yogurt bites! Try to do this quickly, as the yogurt will start to unfreeze in the warm chocolate. It's not urgent, but they can start to melt. So don't drop a yogurt bite in the chocolate and go for a coffee while it sits.
