Ingredients
- 8-inch tortilla
- Egg
- Feta crumbles
- Avocado
- Tomato
- Red pepper flakes, optional
Toast the Tortilla
Grease a small pan and place over medium-high heat. Toast the tortilla in the pan on both sides. Remove the tortilla and grease the pan again if needed.
This step could be skipped, but it makes the texture of this recipe so much better! The crispy, crunchy tortilla ties everything together, and it only takes a minute.
Fry the Egg and Feta
Crack in an egg and add the feta crumbles. Lightly salt the egg.
This part is so easy, but don't forget to throw the feta in the pan too! It's going to get a little soft, a little crispy, and a little melty. It's just perfect.
Assemble
While the egg cooks, spread avocado over the tortilla. Once the white of the egg is set, use a spatula to remove it from the pan and place it over the tortilla. Sprinkle over the diced tomato, and optionally, red pepper flakes.
This part is so easy! Just smear that avocado, drop the eggs and some diced tomato on top, and sprinkle with red pepper flakes if you like your breakfast with a little kick.
