These energy balls pack in fiber from complex carbs, sweetness from dates (with a little extra help from maple syrup) and tons of important micronutrients to fuel your body.

Ingredients
- Shredded unsweetened coconut
- Rolled oats
- Dried pitted dates (or slightly more Medjool dates, but ignore the water)
- Maple syrup
- A pinch of salt
- A splash of water
Make the Energy Balls
Add 1 cup of coconut and the rest of the ingredients to a blender or food processor. Blend until a very lumpy dough forms and you can squeeze a spoonful of the dough into a ball. Form more balls until all the dough is used. Roll in the remaining coconut and enjoy! Store in the refrigerator.
Energy balls are one of the fastest, easiest, and healthiest snacks you can whip up, not to mention cheap! The dates and maple help bind everything in the blender (and make it sweet), so after a while of pulsing with a blender or food processor (I often use the dough setting) you should have a dough that you can easily press into balls. The coconut you roll them in even helps make them less sticky when you want to grab one for a snack.
