Ingredients
- Red cabbage
- Cucumber
- Carrots
- Edamame
- Cashews
- Rice vinegar
- Honey
- Sesame oil
- Everything bagel seasoning
Prepare the Vegetables
Toss the cabbage, cucumber, carrots, edamame and cashews.
I won't lie to you, there's a fair amount of chopping involved in this recipe, but if you want to get it done quicker I highly recommend quartering your cabbage and using a mandolin to quickly shred it. You can also slice your cucumber and carrot with a mandolin to keep the process speedy. It's a handy kitchen tool, especially during summer when you want a lot of refreshing salads.
I buy edamame in a steamer back and just toss it in the microwave earlier in the day. Once it's cooled and your veggies are chopped, you can toss everything together.
Prepare the Dressing
Mix the rice vinegar, soy sauce, honey, sesame oil, and bagel seasoning together to make a dressing. Add the dressing to the salad and toss to coat everything.

- 2 Tbsp rice vinegar
