Cinnamon Roll Overnight Oats
These healthy cinnamon roll overnight oats are the perfect way to sneak dessert in for breakfast.
These healthy cinnamon roll overnight oats are the perfect way to sneak dessert in for breakfast. Blending the mixture makes these overnight oats smooth and creamy, before finishing them off with a cream cheese frosting swirl. They've got a pretty decent protein content at 13 grams per serving, but you could always bump it up with some added greek yogurt.
Let's talk about this meal-prep breakfast recipe!
Ingredients
For the Base
- Whole milk
- Rolled oats
- Cinnamon
- Flax meal or chia seeds
- Honey or Maple Syrup
- Vanilla extract
For the Frosting
- Cottage cheese
- Cream cheese
- Whole milk
- Honey
Blend the Oats
Add all base ingredients to a blender and blend until smooth. Transfer into two containers and refrigerate overnight.
If you've seen my other recipes, you know blended overnight oats are a favorite of mine. That's because blending your oats gives them a perfectly smooth, mousse-like texture that is way better than lumpy, clumpy overnight oats. You could always skip this step, but it's my #1 hack for making breakfast taste like dessert, and overnight oats taste like pudding. I use old-fashioned rolled oats, but quick oats or steel-cut oats would work just fine for this too since it's all getting blended.
You can make store these in small containers, one big container, or mason jars for single-serve portions.
Blend the Frosting
The next morning, add all frosting ingredients to a blender and blend until smooth. Drizzle the frosting over the oats in a spiral.
Another super easy step! You can whip this with an electric mixer instead, or use an immersion blender. It all works, we just want a nice, smooth, drizzle-able frosting to swirl over these cinnamon-y, cream-cheesy overnight oats. It just doesn't shout 'cinnamon roll' if it doesn't have swirl involved.
